Pairing with mollusks: The Pacific Ocean borders more than 4,200 km of coast of Chile, provides an exquisite current to the central valleys that give rise to fresher white wines, including new areas that have allowed cold valley strains, such as gray sauvignon or the pinot noir proliferate.
The great variety of fish and seafood with which the Chilean coast from north to south combines perfectly with this type of wine. A very desirable mollusc, for its flavor and also for its availability, (occasionally it is in closed season) is the crazy one. This bivalve not only has different ways of preparation – crazy cucumber, madmen with mayonnaise or green sauce, empanadas de locos – but it is also combined with a soft gray sauvignon.
The salmon: From the stellar entrances the tartar of salmon is very popular. It is prepared with even and small cuts, seasoned with a mixture that adds fresh ginger, vinegar, tarragon, lemon juice and a touch of soy, served with a small portion of avocado cut into small cubes.
Next to it, a sauvignon blanc is the first thing that comes to mind, although a pinot noir also delicately highlights its various aromas.
